This Maharashtrian delicacy, made from hung curd and mango puree, holds a special place in his heart and is a comfort food that pairs perfectly with soft pooris.
Chef Goila shared the cooking experience with Rahane through his “#ThatOneDish” series, highlighting the cricketer’s love for amrakhand. He emphasized Rahane’s connection to his Maharashtrian roots and how he thoroughly enjoyed preparing and relishing the dish before his West Indies tour.
Amrakhand, a variation of shrikhand, is a renowned dessert in Marathi and Gujarati cuisine. Its smooth and creamy texture, primarily derived from curd, makes it both easy to prepare and refreshingly cooling. The addition of mango in the form of mango puree elevates the dish, resulting in the delectable amrakhand.
To make amrakhand, the recipe calls for hung curd, powdered sugar (honey can be used as an alternative), cardamom powder, saffron strands, mango puree, and garnishing with diced mangoes and pistachios. The hung curd is mixed with the other ingredients, including the flavorful saffron strands, and whisked until smooth. The mango puree is then added and mixed well. The amrakhand can be enjoyed with puri or on its own, providing a delightful and satisfying cheat meal.
